To begin with, we just replaced our old recipe with gluten-free flour but whilst the latest Yorkshire puddings were tasty enough, they never rose, bringing about a doughy consistency as opposed to the airy and crispy texture that is really a good pud.

I used many different recipes using different flours, proportions of ingredients and techniques but eventually, having taken the most beneficial waste people that I used, I chose this recipe which, in my opinion, makes Yorkshire puddings as effective as those I used to make with normal flour.

Ingredients

    • 80g Gluten Free flour mix, see recipe below
    • 55g cornflour
    • pinch of salt
    • 150mls milk
    • 3 medium eggs
    • vegetable oil, for greasing
    • Gluten Free Flour Mix
    •   Makes ½ kg (this will make 6 batches of 80g, with a little left over, so 72 yorkies)
    •   350g fine white rice flour
    •   100g potato flour
    •   50g tapioca starch or flour
